I think part of the thing with coffee shops is the personal interaction that you have with someone creating something specifically for you. In most restaurants, the person who makes your food is not the person who brings you your food, and the person who greets you and takes your payment may be still other people.
In coffee shops, the exchange is much more direct. In a small shop, the same person might be doing everything for you -- taking your order, preparing your choices, and ringing you up. Even in the case where there's a small team making all of this happen, it's happening right in front of you, up close and personal, and you can see exactly what's going on. The chances of actual conversation are substantially increased here, too, as opposed to the situation in a restaurant or another service industry type deal. For at least a few minutes, you're stuck waiting, the barista's got things to do, and it's perfectly reasonable to exchange a few words.
The power of these few words can be enormous. As we know, sticks and stones and bones and all, words are a big deal. You don't have to be a poet to know it.
